The Kitchen

Fewer ingredients, better combined.

Guests are occasionally disappointed that the food is not more elaborate. Simplicity is rather the point — the kitchen is cooking for digestion first and for the plate second.

Meals are plant-forward, warm more often than raw, and timed so that the largest one falls at midday when digestion is strongest. Dinner is early and lighter than most guests are used to, which is usually the change they notice first.

If you have allergies, intolerances or a way of eating you would like respected, tell us at enquiry. It is straightforward to accommodate and easier to plan in advance.

Our kitchen cooks from the gardens and the valley around us. What appears on the plate follows your consultation — your constitution, the season, and how your digestion is faring that week.

Guests are sometimes surprised that the food is not more elaborate. Simplicity is rather the point: fewer ingredients, better combined, and warm more often than raw.

Cool, dry months

Warm, moist, well-oiled

Slow-cooked grains, root vegetables, ghee, warming spice. Very little raw food.

Hot months

Cooling, lighter, less spice

Sweet fruit, coconut, coriander and mint, meals taken earlier in the day.

Damp, heavy weather

Light, dry, well-spiced

Pulses, bitter greens, ginger and black pepper. Dinner noticeably smaller.

Between seasons

Simple and repetitive

The kitchen narrows the menu while the body adjusts. Kitchari weeks are common.

The Dining Room

Eaten slowly, and usually in daylight.

Communal tables are available and never required. Devices stay out of the dining room, which guests resist for about a day and then defend for the rest of the week.

Our chefs run a cooking session on most programmes — three or four dishes simple enough to repeat on a weeknight without a specialist shop.
